Chatfield's Grandpa Snyder's Carob Cake

Grandpa Snyder's Carob Cake
Makes 8 servings
Ingredients: 
  • 1 1/2 cups cake flour (if substituting all-purpose flour use 3 tablespoons less)
  • 1/4 cup Chatfield's Carob Powder
  • 1 teaspoon baking soda
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla
  • 6 tablespoons vegetable or canola oil
  • 1 cup water

  • 1/4 cup sugar
  • 1 tablespoon Chatfield's Carob Powder
  • 1 tablespoon margarine
  • 2 tablespoons soy milk
  • 1/2 tablespoon corn syrup
  • 6 tablespoons powdered sugar
  • 1/4 teaspoon vanilla

Preheat oven to 350 degrees Grease or spray an 8x8 inch pan. Combine wet ingredients in bowl. Combine dry ingredients and sift over wet mixture and stir enough to distribute all ingredients. Pour into greased pan and bake at 350 degrees for 25-30 minutes. Remove from oven and cool. Prepare frosting by mixing sugar, carob, margarine, soy milk, corn syrup in sauce pan. Heat to boiling and boil for 3 minutes, stirring occasionally. Cool. Beat the powdered sugar and vanilla into cool mixture. Frost the cooled cake.
