Chatfield's Chocolate Cupcakes with Cream Cheese Frosting
Makes 20 cupcakes
Ingredients:
- 1-1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 3/4 cup Chatfield's Cocoa Powder
- 1 teaspoon salt
- 3 tablespoons butter, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/2 cup sour cream
Preheat oven to 350 degrees F. Sift together the flour, baking powder, Chatfield's Cocoa Powder and salt, set aside. In a large bowl, cream together the butter and sugar. Mix in eggs and vanilla. Add the flour mixture, milk and sour cream, beating well. Place cup liners in a muffin pan and fill 3/4 full. Bake for 20 minutes. Cool before frosting.
- 2 (8 ounce) packages cream cheese, softened
- 1/2 cup butter, softened
- 2 cups sifted confectioners' sugar
- 1 teaspoon vanilla extract
In a medium bowl, beat the cream cheese and butter until smooth. Add in the confectioners' sugar and vanilla until well blended. Frost cupcakes and serve.
