Carob Sandwich Cookies with Almond Filling

Ingredients:
To make Cookie Dough
- 2 cups all-purpose white flour
- 1/3 cup Chatfield's Carob Powder
- 3/4 teaspoon salt
- 3 eggs
- 1 teaspoon vanilla
- 3/4 cup honey
- 4 tablespoons butter
To make Filling
- 1-8 oz. can/tube almond paste
- 3 tablespoons milk
- 2 tablespoons Chatfield's Carob Powder
- 3 tablespoons honey
Combine flour, carob powder and salt. Mix in eggs, vanilla, honey and butter. Blend well. Chill for 1 to 2 hours or until able to handle. Roll out and cut into circles. Place on greased cookie sheet and bake in 325 degree oven for 8 to 10 minutes. Remove from oven and cool on wire rack. For filling mash almond paste in medium size bowl with potato masher until soft, add milk, carob powder and honey. Mix. Chill. Spread an even amount of filling in between 2 cookies.
